He trained under the late Masami Asai, later worked under Shiro Kamo at Kamotou Hamono, and received his Dento Kougeishi certification in 2019. He also carries on the Echizen Marukatsu lineage passed down from Masami Asai. His knives tend to show a more traditional approach to forging — substantial construction, strong taper and plenty of character.

This 210mm Gyuto is a perfect example. At around 242g, the spine starts at an impressive 5.0mm at the heel, measures around 3.7mm through the middle, then tapers dramatically to approximately 1.0mm near the tip. It is very much a workhorse, but one built around a strong distal taper rather than simply being thick from heel to tip.

The substantial heel gives the knife weight, stability and authority through larger vegetables and dense produce, while the front section becomes progressively lighter and more precise. The thin tip remains agile for onions, shallots and finer work, giving the knife far more versatility than its weight might suggest.

The Blue Super core provides excellent edge retention and a crisp, aggressive edge, while the kurouchi Damascus finish gives the blade a distinctly hand-forged appearance.

With an actual cutting edge of around 217mm and a 49mm heel height, this is a compact but substantial Gyuto — a true Echizen workhorse defined by its weight, taper and powerful cutting feel.

https://www.knivesandstones.co.kr/products/nao-yamamoto-aogami-super-kurouchi-damascus-gyuto-210mm-heart-shaped-ironwood-marble-horn-handle
