The story

Hirotsugu Tosa (土佐廣次) died in 2025. He had been sharpening for close to sixty years.

Sakai splits knifemaking in two. One person forges, another puts the edge on, and the second job is the one you feel every time the blade meets the board. Tosa was a sharpener, 研ぎ師, one of seven on Aoki Hamono's roster of fifteen craftsmen supporting what that page calls six hundred years of Sakai blade tradition.

The national register of traditional craftsmen is unusually specific about him. Signature technique: mirror finishing, 鏡面仕上. Main product: traditional Japanese knives, 和庖丁. Working in the craft since 1967. Certified 伝統工芸士 in 1990, general category, under Sakai forged blades.

Mirror finishing is not polishing in the sense most people mean. A kasumi finish leaves a hazy contrast between the hard steel and the soft jacket around it. A mirror finish takes the same blade and works the surface until it returns light instead of scattering it, which means every stroke before it has to have been clean, because the finish hides nothing. Aoki's roster gives his specialty as honyaki sharpening and mirror sharpening, 本焼研ぎ・鏡面研ぎ, and honyaki, being a single piece of hard steel with no jacket, is the least forgiving thing on the bench.

Retailer pages fill in what the register leaves out. They say he was born in 1948, apprenticed under his own father, and took the sharpening path at nineteen, which lines up with the register's 1967. They put the professional soba knives and the mirror-finish pieces in the Sakai Takayuki line on his stone. And they list a run of honours: a prefectural governor's prize in 2005, competition placings in 2006 and 2009, and in 2015 both the Osaka prefectural Naniwa Meiko title and a Sakai City craftsmanship meister designation.

One date disagrees with itself. The national register puts his certification in 1990. A retailer page puts it in 1996. We have gone with the register and we are telling you the other number is out there.

The Sakai knife museum featured him with a motto attached, 包丁研ぎ一筋, devoted solely to knife sharpening. For a man who spent fifty-eight years at the stone, that reads less like a slogan than a description.
