1The two-makers story
Start with the two makers' own claims, because the whole difference hangs on them. Takefu Special Steel sells Super Gold 2 (SPG2®) as powder metallurgy: refined melt, atomized and rapidly solidified into powder, then compacted, sintered, forged and rolled — giving no segregation and a uniform fine structure — and states its composition is non-disclosure, with a quench hardness floor of HRC 62 or above. Proterial (ex-Hitachi Metals, Yasugi) publishes the full GIN3 analysis — C 0.95-1.10, Si up to 0.35, Mn 0.60-1.00, Cr 13.00-14.50, with nickel, molybdenum, tungsten, vanadium and cobalt all listed as absent and phosphorus/sulphur bound — with a hardening hardness of HRC 59 or above, and calls it literally a stainless with hardness and sharpness comparable to carbon steel.
2The verdict
For most buyers SG2 is the smarter default: it holds an edge longer, runs harder, and we stock far more of it. But the sharpening gap is real — Ginsan is the easiest full stainless we sell to bring back, and its published chemistry is the honest alternative to a powder recipe we simply do not know.

4Composition: published vs not
SG2: the circulated recipe — around C 1.25-1.45, Cr 14-16, Mo 2.3-3.3, V 1.8-2.2 — is secondary-only; Takefu publishes nothing. Ginsan: C 0.95-1.10, Mn 0.60-1.00, Cr 13.0-14.5 — a deliberately simple chromium chemistry with no vanadium, molybdenum or tungsten.
5The carbide story
The honest difference is structural. Powder metallurgy gives SPG2 a fine, even carbide distribution, which is why it can run to 62-64 HRC and hold an edge the way it does. Ginsan is an ingot steel at ~60-62 HRC with low-volume chromium carbides and no hard vanadium carbides — a cleaner, simpler carbide picture that sharpens more easily and takes a keen, crisp edge, though it gives away some total edge life.
6Edge: the one clean win
This is the one clean, defensible performance delta: edge retention, 6 vs 4.5. SG2's fine, uniform powder carbides and higher hardness outlast Ginsan's lean conventional structure. Both sides of the practical debate are worth hearing, though. One pro cook on heavy acidic prep put the real-world gap in perspective: "With R2 about 5 days too. And VG10 and Ginsan also about 5 days — I don't get R2 steel's expected ultra long edge retention." Several home users likewise found the retention gap small in everyday use. SG2 is ahead, but it is not a league — geometry, heat treat and what you cut move the felt gap more than the numbers alone.

SG2 averages about A$409 for a standard 210mm gyuto against Ginsan's ~A$249.95 — a roughly A$160 premium for a 1.5-point edge-retention step. That premium is most fairly read as paying for powder-metallurgy consistency and a longer-lasting edge, not a different performance league.

12It was never only about the steel
The steel grade decides less than the maker, the heat-treat and the grind. SG2 run softly loses its edge advantage; Ginsan over-hardened chips like any brittle stainless. Read both as a range, not a guarantee — and let the maker's reputation do its share of the work.
14Living with it in Australia
Living with either in Australia comes down to one honest caveat: both are fully stainless, but neither is stain-proof. Rinse and dry after use, never leave it in the sink, keep it dry — normal care keeps both gleaming. Ginsan's lower chromium can take a light patina over time if neglected; that is honest chemistry, not a flaw to fear.

Is Ginsan really easier to sharpen?
Yes, meaningfully — 8.5 vs 5 on our sharpening-ease scale. No hard vanadium carbides and lower hardness make it nearly as forgiving to sharpen as carbon steel. It gives up some raw edge life to SG2, but if sharpening is part of the ritual you will prefer it.
Does SG2 hold an edge much longer?
On paper, yes — 6 vs 4.5 on edge retention, and community head-to-heads give SG2 the retention edge. But the practical gap is smaller than the knife-forum reputation suggests: one pro cook reported about five days of edge on both, and several home users found the retention gap small in everyday use.
Are they both stainless? Will either rust?
Both are fully martensitic stainless — SG2, and Ginsan with 13-14.5% chromium. Neither is stain-proof; a low-chromium stainless like Ginsan can discolor or form a light patina in practice, and everyone should rinse and dry after use. No maker calls Ginsan semi-stainless.
Which is easier to live with day to day?
Both are easy — they are stainless. SG2 wants a decent stone and slight patience to sharpen but rewards it; Ginsan is the most forgiving full stainless we stock to keep sharp, and it takes a keen, crisp edge.
Is SG2 worth the price premium over Ginsan?
For the edge you never think about, yes — the retention and consistency are real. If you sharpen often and enjoy the process, Ginsan gives you most of the kitchen performance for roughly A$160 less, with the easiest sharpening in stainless.
