유명한 이마니시 키타야마 숫돌이 인기 있는 베이스리스 버전으로 Knives and Stones에 다시 입고되었습니다. 키타야마는 많은 탄소강 애호가들이 즐겨 찾는 숫돌 중 하나입니다. 최신 합금강에서는 연마 속도가 매우 빠르지는 않지만, 히타치 백지강과 청지강 같은 전통적인 탄소강에서는 뛰어난 성능을 발휘합니다. 사용 전 약 15분간 물에 담가두어야 하지만, 충분히 흡수되면 매우 곱고 균일한 마무리 면을 만들어내어 와이드 베벨 연마에 특히 적합하며, 하기(심재)와 지가네(연철 클래딩)의 대비를 아름답게 살려줍니다.
