Carbon steel is reactive — it will rust quickly if not properly cared for. Always wash immediately after use, dry thoroughly, and apply a thin coat of food-safe oil (camellia, mineral) before storage. Over time it develops a patina that offers some natural protection and, for many users, becomes part of the knife's character. Rewarding to use, but not recommended if you want a "wash and forget" knife.

Carbon Steel 炭素鋼

Where it shines

  • The keenest edge a kitchen knife will take — a fine, acute, carbide-light grain that screams off the stone.
  • Comes back fast: a few strokes on a whetstone revive a working edge, far quicker than any stainless.
  • Two honest families to choose from — White for maximum keenness, Blue for longer edge life — and we stock both in depth.

Where it doesn't

  • Reactive: carbon steel patinas with use and rusts if left wet. Drying it after every wash is the non-negotiable habit.
  • Both families ask the same care — there is no grade, White or Blue, that is the rust-resistant one.
