시바타 타카유키가 수석 연마사로서 마사카게를 창립했으며, 현재도 그의 기준에 따라 제작됩니다. 다만 그가 직접 연마하는 칼은 자신의 코테츠 라인으로, 날의 양면에 서로 다른 숫돌을 사용하여 채소와 생선에 최적화시킨 그만의 시그니처 방식을 적용합니다.
